Fried Ice Cream

1 gallon vanilla ice cream (makes 15 or more servings)

frosted flakes (crushed very fine)

brown sugar and cinnamon to taste

Form balls of ice cream with hands and rool in cereal mixture. Refreeze until hard.

Beef Enchiladas

1 lg pkg of flour or corn tortillas

1 1/2 lb ground beef, drained with taco seasoning added

2 cans of enchilada sauce

1 can tomato soup

1 pkg shredded cheese

Fill tortillas with beef mixture, wrap up and place seam side down in a 9x13 pan. Heat the enchilada sauce and soup together in a saucepan and pour over the tortillas. Cover with shredded cheese and bake at 350 for 30 minutes.

Chicken Enchiladas

1 lg can of chunch chicken

1 jar of taco sauce

1 lg onion

1 cup sour cream

2 can cream of chicken soup

1 lg pkg of flour or corn tortillas

1 sm pkg of cheese (chedder or mozzarella)

Fry the onions, add taco sauce, and chicken - heat through. Fill tortillas with mixture, wrap up and place seam side down in a 9x13 pan. Mix soup and sour cream - pour over tortillas. Sprinkle cheese on top of all and bake 350 for 30 minutes.

Burritos

1 pkg of flour tortillas

1-2 lb ground beef, drained with taco seasoning added

1 can refried beans

1 pkg of chunck cheddar cheese

Add the refried beans to the beef mixture, heat through. Add a large spoonful to the center of each tortilla, place a thin slice of cheese on the top and fold the burrito like an envelope. Place on a baking sheet and bake at 350 for 20 minutes. Make 10-12.

Churros

2 cups water

1 tsp. salt

2 cups flour

cinnamon or powdered sugar

Bring water and salt to a boil. Remove from heat. Pour in flour. (Beat with a spoon until it forms a paste or until it pulls away from the side of the pan.) Cool to room temperature. Heat 2-3 minutes in a deep fryerat about 400 degrees. (Hot, but not smoking.) Spoon the dough into cookie press (cruller). Squeeze the dough through the press into the oil (5-8 minutes).
